"DÉGUSTATION" is a French restaurant in Seijo, Tokyo.
Since 2020, using the cooking skills and knowledge of ingredients we've gained, we started serving shaved ice.
At first, we didn't know much and tried different ices and machines to see what works best. Making shaved ice was harder than we thought, but we also found it very interesting.
Our shaved ice slowly started getting popular among our customers, and now we get lots of reservations every day.
Being featured on TV and in magazines has made us really proud and confident in our shaved ice.
We believe our journey can inspire those who want to try making shaved ice or open their own place.
This course focuses on the essential skill of shaving ice, the foundation of making great shaved ice. You'll learn everything from how to use and maintain the shaving machine to mastering both basic and advanced shaving techniques. We'll also cover how to adjust your methods for different environmental conditions like changes in temperature and humidity. By practicing shaving techniques, you'll get better at controlling the ice.
It's not an exaggeration to say that the uniqueness of shaved ice comes from its sauces and syrups. We will teach you how to make basic syrups that serve as a foundation to enhance fluffy shaved ice and how to create sauces using seasonal fruits.We will introduce techniques and recipes that require skills and ideas, such as espuma and glaçage. Additionally, Chef Kobuna will support you in developing your own original sauces and syrups.
You can learn both the shaving technique and the sauce & syrup making techniques together. The skills of shaving ice and making sauces and syrups are very important for creating delicious shaved ice. One without the other is not sufficient. We will teach you all the necessary techniques for making delicious shaved ice that our shop has mastered.
For those living far from Tokyo or wanting training with their own machines, we provide a one-day or 2 days intensive course at your location. We'll agree on the training content beforehand. Please be aware that travel costs for our staff, including transport and accommodation, will be added to the training fee.
After hearing about your shop's needs, style, and the equipment you have, Chef Kobuna will propose a unique shaved ice menu just for you.
We'll assist you from scratch with everything needed for opening and running your store, including sourcing ingredients, menu development, and staff training. It's commonly said that the success rate for restaurants is quite low.
